Pumpkin Cookies a la City Bites
Those of you around the Oklahoma City area know City Bites and their tasty sandwiches. But do you know their cookies? Specifically, their Pumpkin with Cream Cheese Frosting Cookies?
It's my turn to bring a treat to the 'Glee' Watch Party I have each week with a couple of friends. So far, we've had root beer floats (made with a butterscotch root beer, yes, yummy!) and some fantastic banana cupcakes, so I'm feeling the pressure.I found a fellow Oklahoman's blog with a pumpkin cookie recipe promising to be just like CB's. One comment following the post, however, swears that the exact CB pumpkin cookie recipe is on another site. So, cookie recipe from one site and frosting recipe from another. I don't know if the cookie recipe is the real thing, but it's doggone close.
Pumpkin Cookie Recipe - originally found on All RecipesINGREDIENTS:2 1/2 c. all-purpose flour1 tsp. baking powder1 tsp. baking soda2 tsps. ground cinnamon1/2 tsp. ground nutmeg1/2 tsp. ground cloves1/2 tsp. salt1/2 c. butter, softened1 1/2 c. sugar1 c. pumpkin puree1 egg1 tsp. pure vanilla extractDIRECTIONS:1. Preheat oven to 350 degrees F (175 degrees C). Combine all dry ingredients and set aside.2. In a medium mixing bowl, cream butter and sugar together. Add pumpkin, egg and vanilla and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by generous tablespoons; flatten slightly.3. Bake 13-15 minutes. Cool cookies, then frost.
Cream Cheese Frosting - from the blog Dishin & DishesINGREDIENTS:8 oz. cream cheese, softened1/2 c. butter, softened4 c. powdered sugar, sifted1 tsp. pure vanilla extract1/2 tsp. ground cinnamon1/2 tsp. ground allspice1/2 tsp. ground clovesDIRECTIONS:Sift the powdered sugar. Cream butter and cream cheese together until fluffy. Add the vanilla and spices. Slowly add the powdered sugar.* Frost cookies.*I got ahead of myself and just added everything together at once and the frosting came out perfect!
